never fails. This grilled spicy coconut chicken is that recipe. Rich coconut milk, a hit of sriracha,
bright lime, and a touch of coconut sugar come together in a marinade that turns simple chicken

bag, and a grill. Here’s how to make it your own go-to.

Why This Recipe Works

Boneless, skinless chicken thighs are the secret to why this dish stays so juicy on the grill —
they’re far more forgiving than chicken breast and soak up marinade beautifully. The coconut
milk tenderizes the meat while coating it in richness, the sriracha and lime cut through with heat

The Recipe

Ingredients

For the Chicken:

  • 2 lb boneless, skinless chicken thighs
  • For the Marinade:
  • 1 can (about 13 oz) unsweetened coconut milk
  • 6 cloves garlic
  • ¼ cup coconut sugar
  • 2 Tbsp olive oil
  • 2 tsp salt
  • 4-8 Tbsp sriracha, or ¼ cup Sambal Oelek
  • 2 limes, juiced

Instructions

Make the marinade. Add all marinade ingredients to a blender and blend until smooth.
Pour the marinade over the chicken in a bowl or resealable bag, making sure every
piece is evenly coated. Refrigerate for at least 3–4 hours, or overnight, to let the flavors
fully soak in.

Grill. Preheat the grill to medium-high heat. Remove the chicken from the marinade and
grill, brushing with fresh marinade as it cooks to keep it moist and flavorful. Cook until
the chicken reaches an internal temperature of 165°F.

Control the heat. Four tablespoons of sriracha keeps things mild — add more if you like it fiery,
or hold back if you’re serving a spice-shy crowd.

  • Save some marinade. Reserve a portion of the marinade before it touches the raw

  • Finish it fresh. A scatter of fresh cilantro and a few lime wedges on the side brighten
